How can I change the background themes for quotes?

You can select or change a background theme by tapping on the themes icon given next to the category bar at the top of the quotes screen. There are different theme options on the next screen which you can choose from. Also, you can change the background theme from Settings. Just go to the app Settings and tap on Background Themes option.
